Recipe – Lemon and Blueberry Muffins
These muffins are so light and fresh so don’t feel too guilty when you tuck in as they are only about 160 calories each compared to regular muffin recipes.
And even less if you can resist the icing on top.
This recipe can easily be changed to be Cinnamon and Raisin; Chocolate and Orange; Raspberry and Walnut.
You can also make gluten free by using the correct gluten free flour.

Ingredients
For the muffins
- 200g/7oz of self-raising flour
- 75g/3oz of Caster sugar
- 1 lemon
- 150ml/quarter pint low fat natural yogurt
- 50ml/2fl oz sunflower oil
- 1 teaspoon of bread soda
- 100/40oz blueberries
- 2 eggs
- 2 tablespoon of semi-skimmed milk
For the icing
- 100g/4oz icing sugar
- 4 teaspoons of fresh lemon juice
- Fresh lemon rind
Equipment needed
- Weighing scales
- Large bowl
- Large spoon
- Whisk
- Zester/Grater
- Juicer
- Small bowl
- Muffin tray
Instructions
- Head your oven to 180 degrees
- Measure and sieve the flour and bread soda into the bowl
- Weigh the caster sugar and add to the flour
- Zest the lemon and squeeze the juice
- Add in a tablespoon of lemon rind
- Mix the eggs in a bowl
- Measure the yogurt and add to the eggs
- Measure and add in the milk
- Now add the oil
- Mix it all well together with the whisk
- Add the egg mix to the flour mix
- Stir gently with a spoon to make a thick batter
- Add the blueberries and stir gently with a spoon (don’t worry if it all turns a bit purple – it will work out fine!)
- When putting the mixture into the muffin cases, my advice is to use a potato scoop so all the muffins are the same size
- Fill all the cases evenly
- Pop into the oven for 16-18 minutes
- Once golden brown, take out of the oven and let cool (they smell amazing!)
Icing
- Next, do the icing
- Sieve the icing sugar ino the bowl
- Add in the lemon juice and some lemon rind and stir until smooth
- Spoon some of the icing over each muffin
- Add some more lemon rind on top
