WATCH: LOETB tutor shows how to make healthy Banana and Oat Bars – an ideal lunchbox filler

    Recipe – Banana and Oat Bars

    With the schools back, for many parents the task of keeping variety and healthy treats in the lunch box can be a challenge.

    But this Banana and Oat Bar recipe from LOETB tutor Valerie Dillon are simple to make, healthy and also taste lovely.

    These tasty treats are high in fibre and low in sugar so perfect for kids (and adults too!)

    You can play around with this recipe even adding grated apple and seeds.

    Ingredients 

    • 3 ripe bananas
    • 2 Tablespoons of melted butter
    • 200g/7oz porridge oats
    • 1 Tablespoon of honey/maple syrup
    • Any dried fruit(2 oz of raisins for example)

    Equipment needed

    • Large bowl
    • Fork
    • Weighing scales
    • Baking tray
    • Small bow/jug
    • Parchment paper

    Step by step guide

    • Pre-heat oven to 180 degrees
    • Melt the butter in the microwave
    • Peel and chop up the three bananas into large bowl
    • Mash up the bananas
    • Add the egg into the bananas
    • Mix egg in well
    • Now add the cooled melted butter
    • Add the oats and mix all together
    • Add the dried fruit and honey and mix in –
    • Line your baking tray with a sheet of parchment paper
    • Put all of the mixture into the tray
    • Use your spoon to level it out
    • Put into the oven for 20 minutes until it’s a lovely golden colour
    • Let cool and then cut into squares – you should be able to get up to 16 off it.
