The hugely popular American-style diner Eddie Rocket’s is to open in Portlaoise in early 2017.
The chain has begun the recruitment process for a new restaurant in the Laois Shopping Centre.
All going to plan the restaurant will open in January 2017 in a unit which faces onto James Fintan Lalor Avenue. The unit was formerly occupied by a financial services firm.
Catherine Wilson (nee Gilligan), a Durrow native, is heading up the expansion of her franchise which already includes restaurants in Kilkenny and Carlow. It is expected to create up to 25 jobs.
Staff interviews have already taken place for roles including manager, chefs, porters and waitrons.
The first Eddie Rocket’s Restaurant opened in Dublin in 1989 and they have 36 restaurants in Ireland. They are also in Wales, Northern Ireland and England.
